Bread Upma

This is a recipe prevalent in the Maharashtra and North Karnataka regions of India. Last month, when I visited my friend's place who hails from the northern parts of Karnataka, I got a chance to eat Bread Upma and found it very interesting. Let me share this very nice dish with you.

Take a loaf of bread and chop the slices into small pieces (You can actually tear the slices into parts with hand). One loaf of bread is enough for 2-3 people. Keep it aside.

Heat some oil in a pan and toss in 1/2 teaspoon mustard seeds followed by 1/4 teaspoon cumin seeds. Fry till the seeds splutter fully. Add curry leaves, chopped green chillies and 1/2 chopped tomato. Tomato makes the bread softer and adds a tangy taste. Add some chopped onion too. Stir fry on medium level for about 3 minutes or till the tomatoes are cooked and soft.  

Add the bread pieces, salt to taste, turmeric and chilli powder (optional). Add groundnuts and sprinkle some sugar to taste. Mix well. Cover and keep for some time before serving. Garnish with finely chopped coriander leaves.
